Baked butternut squash fry

2 portions

  • 1creaming butternut
    2 tablespoons virgin camelina oil
    1/2 teaspoon paprika
    1 tablespoon cornmeal # 250
    Salt and pepper
  1. Preheat the oven to 425°F.
  2. With a knife, remove the skin from the squash. Cut the squash in half lengthwise and remove the seeds with a spoon.
  3. Cut the squash into sticks (fries) and place them in a bowl with all the other ingredients.
  4. Place the fries on a baking sheet and bake for 30 to 40 minutes or until the fries begin to caramelize. Be sure to turn the fries halfway through cooking.serve with spicy mayonnaise
