500g inside round beef (very fresh and not tenderized), cut into small cubes
2 tbsp. (30 mL) roasted camelina seeds
1 C. (15 mL) grated fresh ginger
1/2 of an Asian pear, cut into small cubes
1 C. (15 mL) roasted camelina oil
1 C. (15 mL) tamari sauce
1 C. (5 ml) Dijon mustard
1 C. (5 mL) hoisin sauce
2 tbsp. (30 mL) chopped chives (garnish)
1/4 Asian pear, sliced (garnish)
- In a large bowl, combine the beef, 1 Tbsp. roasted camelina seeds, ginger, half the Asian pear, roasted camelina oil, tamari sauce, mustard and hoisin sauce.
- Place a cookie cutter on a plate and fill it with tartare. Gently remove the cookie cutter.
- Garnish with roasted camelina seeds, chives and Asian pear slices.
- Serve immediately with croutons of bread (if desired).
