Beef tartare with camelina

500g inside round beef (very fresh and not tenderized), cut into small cubes

2 tbsp. (30 mL) roasted camelina seeds

1 C. (15 mL) grated fresh ginger

1/2 of an Asian pear, cut into small cubes

1 C. (15 mL) roasted camelina oil

1 C. (15 mL) tamari sauce

1 C. (5 ml) Dijon mustard

1 C. (5 mL) hoisin sauce

2 tbsp. (30 mL) chopped chives (garnish)

1/4 Asian pear, sliced ​​(garnish)

  1. In a large bowl, combine the beef, 1 Tbsp. roasted camelina seeds, ginger, half the Asian pear, roasted camelina oil, tamari sauce, mustard and hoisin sauce.
  2. Place a cookie cutter on a plate and fill it with tartare. Gently remove the cookie cutter.
  3. Garnish with roasted camelina seeds, chives and Asian pear slices.
  4. Serve immediately with croutons of bread (if desired).
